Apple Pie Energy Bites

We found this delicious recipe by Natalie's Happy Health. There are so many fun ways to include your adaptogens every day. This reminds me of the days I would sit at the tonic bar in L.A and sip a coffee free reishi chaga cappuccino while munching on banana date walnut energy balls. It was my version of coffee and donuts, however the nutrition I was receiving along with the texture and flavor was so much more satisfying. My focus and energy was sharp and seemingly endless all day. My mood was also affected in such a positive way by beginning my day with such a tonifying, nourishing, regimen. So I would love to share the experience by offering this recipe along with a soothing, awakening, dark herbal coffee free cappuccino for your next breakfast.

Apple Pie energy balls

Ingredients:
1 cup apple chips
12 Medjool dates
½ cup old fashioned oats
½ cup almonds
1 tablespoon chia seeds
1 teaspoon Ceylon cinnamon
⅓ teaspoon allspice
Instructions
Remove the pits from dates and soak them in hot water for several minutes. When the dates are softened, drain them and place in food processor. Save the water.
Add the other ingredients - oats, almonds, chia seeds, spices and apple chips to a food processor and blend until mixture turns into paste or dough-like consistency. Add 2-3 tablespoons of water in which you have soaked the dates if the mixture is too dry.
With the small spoon scoop the mixture and roll into balls. Place the balls on the baking sheet.
Store apple pie energy bites in an airtight container in the refrigerator until serving.
